What a whirlwind couple of weeks! Hope everyone had a wonderful holiday! There was no post last weekend because we were both sick as dogs and quarantined to the bed. We had great plans of baking individualized homemade treats for our family to give as extra gifts, but it just didn't happen :( By the time we felt better, it was Christmas Eve and we were whisked away from our little kitchen. But after an eventful few days, we finally found ourselves back at home on Saturday. Knowing that we really wanted to cook, but realizing we had theater tickets that night, decided to whip up a quick dish before having to leave. We got such a late start that this dish ended up being a breakfast one...at 5pm. Neverthless, this recipe was easy and delish! Happy New Year! XO
Newlywed Note
This is one of those great recipes where the possibilities are endless in terms of what ingredients you want to throw into the mix. Use what you have in the house or run out and pick up your favorite combination of meats, veggies and cheeses. This recipe was super simple, quick to make and yet elevates the typical egg dish.
Served on a long cheese board with prosciutto and thyme used as garnish.
