Polenta Cakes

Polenta is another Italian peasant food that we make quite a bit. Usually it's kept very simple and used to fulfill a basic, savory craving - so we were surprised to find a recipe that advertised it in the form of a sweet treat. These Polenta Cakes are unique and adorable. We baked them with a dried fig atop each piece. Doing so made them feel a little extra special while simultaneously providing a fun surprise for the taste buds. You can basically think of them as corn muffins with a Tuscan twist!
Newlywed Note
Make sure to mix the batter VERY well or else you will taste little beads of polenta that do not make sense when cooked in this format. Almond flour can be replaced with coconut flour or just the plain, regular kind.
Wrapped in parchment paper and tied with twine (to bring to a birthday party)!
