Slow Cooker Parmesan Honey Pork Roast

This past work week was crazy busy, so we tried to catch up on some sleep (minus running a quick 5K on Saturday morning) and Oscar nominated movie watching over the weekend. We definitely don't take enough advantage of our crock pot and finally decided it was time to break it out. We had fun choosing the piece of pork to roast for this recipe and felt relieved knowing the slow cooker would do most of the heavy lifting. The sauce was pretty easy to make and MADE the meal. For the sides, we threw together what we had in the fridge and came out with mashed potatoes infused with thyme and parmesan as well as blanched asparagus mixed with chopped pancetta and pine nuts.

Splurge on a really good piece of meat - the less fat the better. You may not need to cook for 6-7 hours, as suggested. As long as the thermometer reaches 160 degrees, the meat should be done.
