Blackberry Bacon Pizza

The past couple of weeks have consisted of hosting visiting family, throwing a dinner party, dog-sitting, and hunkering down (for three days) for a hurricane that never came. Since most of the three days locked inside were spent experimentally cooking with the dramatic amount of food we bought, we wanted to go light this weekend and attempt something relatively easy. Hyde Beach Kitchen has been on our radar for a while now as being one of the best ocean-side restaurants in town. And while one of us would go simply for the decor, the food is supposed to be well worth the trip as well. Looking at their menu, their pizzas stood out as being super unique and creative. The Blackberry Bacon option topped with ricotta, blackberry marmalade, triple smoked bacon, arugula, and parmesan seemed too cool to be true, so we gave it a go. You'll be amazed at how all of those ingredients combined defy the palette odds and complement each other so smartly. We used this recipe to make the blackberry marmalade, and simply piled the rest of the ingredients listed on top. It's a fun, flavorful escape from the expected.

You may need to add some corn starch to the marmalade to thicken it up a bit before spreading over the pizza dough.
